2013 Cactus Vineyard Riesling

Riesling from a vineyard in between Eden Valley and Craneford in the Eden Valley Region. The vines are grown in sandy/loam soils at an altitude of 460m. The grapes are both harvested and bunch sorted to remove impurities by hand, and whole bunch pressed into chilled stainless tanks for settling. Pressings are not included. The wine is racked after one week and fermented cool to retain freshness and aromatic integrity. The wine is clarified and racked immediately post fermentation, then held cold for four months to achieve stability prior to bottling.
